Description/Palate
Richly structured and styled, Lions Peak’s 1999 Cabernet Sauvignon
displays unique complexity. Twenty-two months in oak
led to depth and further character. Deep nuances of
cassis, blackberries, and dark chocolate, threaded with exotic
spices and added components of oak and vanilla, create a rich,
complex tapestry of soft tannins and deeply aromatic
layers of fruit.
Background
Lions Peak Vineyards is located
in the northern part of the Paso Robles appellation, approximately
midway between Los Angeles and San Francisco. Like most classic wine
estates, Lions Peak Estate Vineyard, at 120 acres, is not large.
Currently 40 acres are planted in Cabernet
The vineyard was selected for its terrain and complex soil. The soil
types range from steep hillside with limestone to sandy and clay loam
terrain. Leaf pulling and thinning have been implemented to ensure
that each bunch of fruit received optimum sunlight.
The 1999 growing season was longer
than usual due to exceptionally cool weather that continued into
fall. The fruit achieved maximum maturity and yielded premium fruit
with perfect Brix. Only the grapes that are grown at the Lions Peak
Estate produce this unique wine experience. The fruit was hand
harvested.
Food Parings
The careful balance of this
full-bodied, wine enhances its pairing with rich and flavorful foods.
Use
this one just like you would a great, well made Bordeaux. The wine
would go well with grilled steak, prime rib, and most other grilled
meats. Also, put it next to casserole, stews and your best chocolate
experience.....yes!....chocolate. Taste and see!
Cellar Hints
Keep it cool (55-65 degrees F).
Properly
cellared this one will drink well 10 years or more. Don't be put off
by the sediment, the wine was produced without final filtration to
enhance its size and complexity.
