Description/Palate
A complex
fruity aroma with hints of melon and mirabelle. You'll also taste
ripe Meyer lemon and tropical fruits such as papaya and mango.
Background
Gysler is how you see the
enormous changes German wines have undergone in the past decade.
Alex gained control of the estate rather abruptly due to his father's,
Gernot, untimely death. Gernot was man of his times. An
honorable and honest vinter who came of age in the post-war years.
He was seduced by both technology and by all the new hybrids which
promised auslese each year.
Alex made some
further improvements. He threw away the separator and started
whole cluster pressing. He is also moving ever closer to
100% ambient temperature yeast fermentations. He has
shifted cover crop to every second row, renewed composting, done
away with dosage and moved entirely to stainless steel.
Food Parings
This
Kabinett is a blockbuster and would be a terrific choice with
Chinese, Thai or Japanese dishes which have some spiciness. It is
perfect to drink on its own or with appetizers and fruit. Poultry or
wild fowl would also be complimented by this one.
Cellar Hints
Keep it cool (55-65 degrees F).
Kabinett of this type will drink best while young but can be
cellared properly for up to two years.
