Background
100% Free Run, Estate
Chardonnay. Free Run means pressing fruit free of skin and seeds.
Fermentation is done nearly 2/3rds in Stainless with only the last
1/3rd in Oak minimizing the barrel-wood flavor replacement.
What is left is natural fruit flavor - probably flavors that you'll
be experiencing for the first time!
Day In The
Country Chardonnay has distinct flavor notes rich in tropical fruit,
pear, apple, fig, and melon
Carmody
McKnight soils are volcanic rich in minerals and nutrients and
limestone found only west of Paso Robles.
Food Parings
This wine would be outstanding with shrimp dishes
and is perfect next to a light seafood salad. Most of the feedback
we get from clients tell us that it is used as a cocktail wine with
appetizers particularly in warm weather. It should be well chilled
and you should have plenty on hand. It goes fast!
Cellar Hints
Keep it cool (55-65 degrees F) and the wine will drink very well for
3 or 4 years. The wine is made to enjoy now!
